Winter melon is mildly sweet and when the "puree" is added to the chicken soup at the last leg of cooking, it balances the chicken soup to perfection; more importantly, retain as much nutrients (e.g. Vitamin C) as possible. The winter melon "puree" also acts as a natural thickener to the soup

I came across this "puree" technique from a cooking segment on TV. The reason for this method is to minimize cooking time under boiling conditions which may otherwise destroy the Vitamin C- rich winter melon. Pureed soups is not new but it is not so commonly seen in Chinese soups.

Most of us will turn to frying or <a href="https://amzn.to/3sOuAUV">air-frying</a> fish skin to make crunchy fried fish skin (hey, the famous fish skin snack!) but I wanted to try something different to replicate something similar inspired by the milkfish soup in Taiwan (of course, I also do not have an <a href="https://amzn.to/3sOuAUV">air-fryer</a> to make crunchy fish skin).<br />

Lightly marinated with soy sauce, sesame oil, white pepper, this <b>Steamed Fish Skin</b> is absolutely delicious. One key step before steaming them was to blanch them in boiling water, to rinse away the remnants of "blood" from the frozen fish which may sometimes give the fish its unwelcomed strong fishy smell.<br />

<b>Steamed Fish Skin</b><br />
<i>Ingredients</i>:<br />
1 pack frozen milkfish fish (purchased from <a href="https://www.sayweee.com/en/account/referral/landing?referral_id=7564757&t=">Weee!</a>), thawed from frozen. Blanch fish sections in boiling water for 1-2mins. Set aside<br />
1 tsp soy sauce <br />
2 tsp of sesame oil, divided use <br />
Pinch of ground white pepper, divided use<br />
1 tsp minced ginger <br />
2 tbsp chopped up cilantro and/or 1tbsp chopped green onions<br />
1 tsp sliced red chili<br />

<i>Directions</i>: <br />
Marinate blanched fish with soy sauce, 1 tsp sesame oil, ginger, white pepper. Steam fish skin with green onions, chili (and if you have tomato, add some chopped up tomatoes) for about 15mins. Add remaining sesame oil, more white pepper and generous amounts of cilantro before serving.<br />

Besides, the flexibility Panda Express offers e.g. being able to customize and order a full-side of vegetables (combination of cabbage, broccoli and kale) instead of side-order rice/noodles - meets our needs as well. As for entree dishes, our choices are pretty much standard - usually chicken teriyaki and occasionally, orange chicken. The standard plate combination lets you pick 1 side + 2 entrees for less than $15. The family meal consists of 2 sides and 3 entrees, less than $40, able to feed a party of 4-6; and in our opinion so worth it when there is a meal deal (running promotion for less than $35) for a party of 4-6 - also equivalent to feeding 2 people for 3 days. I did not even know what dish my friend wanted to prepare. She placed a globe eggplant in her oven to roast *<i>we started chatting</i>*, and in the midst of that, went back to the stove and stir-fry another vegetable dish *<i>still chatting</i>*. Not realizing that time has gone past, she then removed the roasted eggplant from the oven. At this time, the flesh of the eggplant has been cooked (charred) and softened. Next, she was removing the flesh from the eggplant and adding it into a simmering pot of pre-fried onions, tomatoes, spice. *<i>still chatting</i>*. At this instance, the dish was coming together as some kind of spiced mashed-eggplant dish.<a name='more'></a>

Roast 1 globe eggplant, follow instructions here. Remove flesh from eggplant, set aside.<br />

In a food processor, blitz half medium-size onion, 1 tomato, 3 cloves garlic, 1 cm ginger knob, 1 fresh chili. Do not over-process. The onion-tomato mix should look like finely diced mixture and not a paste.<br />
<br />
In a pan, heat some oil and aromatize 1 tsp curry powder, pinch of ground turmeric, cayenne pepper, cumin then add the onion-tomato mix and fry for a few minutes till a gravy-sauce forms. When simmering, add the eggplant and mix it thoroughly with the gravy till like a mash. Simmer for 2-3 more minutes till all the flavors develop. Serve as a dip, with bread or as a side-dish with steamed rice. You can even use it as a pasta sauce.<br />

Then it came back to me that I have actually made a similar <a href="http://teczcape.blogspot.com/2010/09/okra-and-eggplant-stew.html">quick-stew</a> before using similar method of roasting the eggplant, removing the flesh and using it in a stew, also with tomatoes and onions.<br />

I have not seen any tortilla in the store with such simple and clean ingredient list. I also like that it uses avocado oil instead of highly processed oil soybean oil or canola oil which is known to be one of the causes of inflammation in our body. Avocado oil has a high smoking point compared to extra virgin olive oil, so a good reason to be in the ingredient list as during preparation/usage, as the tortilla may need to touch a hot pan or sit in a hot oven/air-fryer.<br />
<br />
The recommendation preparation is to use a hot pan, cook each side for 30 seconds and watch the tortilla cook, turn hot and crispy/flaky in 1 minute. The longer you cook, the more crispy it becomes, so you control the outcome and how you want to enjoy the tortilla.<br />

As I was planning to make a super taco with the flour tortilla, I stick to the recommended 30seconds per side so that the tortilla remains pliable to be enjoyed as taco. Our family's super taco loaded with pulled pork (substitute for carnitas), topped with onions, cilantro, with bonus avocado and fresh microgreens. Yes, all loaded and the tortilla still strong to withstand the delicious load, and pliable enough to fold without the taco breaking apart. What's amazing - the tortilla was soft yet flaky at the same time.<br />

These tortilla tastes so fresh and delicious and makes great tacos. At this point of writing, I am already thinking of many other ways to enjoy this award winning product e.g. quesadilla, pizza, mini sandwich wraps/rolls and even something as simple as enjoying these tortilla with everyone's favorite - peanut butter!<br />
I also tested and tried oven-method to warm/cook the tortilla and it worked perfectly. Preheat oven 400F and toast/cook each side for about 2 minutes. It's just so therapeutic to see the tortilla rise, bubble and puff!<br />

These savory <b>Corn Tuna Bread Rolls</b> with soft fluffy bread filled with sweet (corn kernels)-savory (tuna) were addictive! The dough-bread was also given generous touches of dried herb sprinkles just before sending off into the oven to bake. Another advantage of making these breads at home is the bread rolls can be loaded with more filling, to optimize the ratio of filling to bread.<br />

Fry for 5-6mins, salt and ground white pepper to taste. Turn off the heat when egg fried rice is done, add the lettuce and mix into the rice.<br />

Whole fish or frozen sections can be usually found in Asian (Korean and Chinese) supermarket. I bought frozen sections (frozen ribbon fish rolls) from online grocery store earlier, not knowing how I want to cook it.
